I am sitting here in the garden watching the birds frustrate my cat Eddy, waiting for hubby to bring in a PCC rotisserie chicken and a tub of something paleo friendly from their deli.
I stood on the scales this morning and saw 149 lb. Hoping my weight stays under 150 by Sunday, fingers crossed!
My meals for today…
Same as yesterday
Mixed fruit and nut salad: strawberries, pineapple, apples, orange segments and a sprinkling of my paleo trail mix on top.

About to try my Banana Walnut Bread warm out of the oven. Check back in the morning for the outcome and recipe. I’m thinking it is going to be very souffle’ish and more of a pudding than a bread.

Meals for today…
Paleo Almond and Raisin Scone, smooshed banana, dollop of coconut cream and a prune on top. Apple slices and coffee.
Lunch at home today, WOOHOO!
Hamwiches, some with apple wedges and some with gherkins within – YUM! Green tea unsweetened.
After school snack:
I earned this! Teaching 3rd and 4th graders in 86* temp, no A/C and then a track practice after school.
This never tasted so good!!!
Mongolian Grill, MY FAVORITE!
No noodles or rice, tons of veggies, chicken and a little ladle of plum sauce drizzled on the top. I also have a tub of spicy Mongolian Sauce on the side to dip into.
Have already decided on tacos for dinner tomorrow. Let’s see how that pans out.
I am typing you this from my deck at 9:30pm, getting some refreshing cool air, listening to the frogs and having a night cap

Jimmy John’s Unwich # 5 (Lettuce wrapped Vito without cheese), my orange from yesterday.
Bolognese made with ground grass fed beef.
I would normally have this over baked spaghetti squash but I fancied a baked sweet potato instead
Well that was the plan and then…
I was wondering why the potatoes were taking so long to cook in the microwave. I like to start them off by nuking them and then finishing them in the oven.
But “darn it” my microwave broke and we were too starving to wait for them to oven bake.
So this was dinner…
While I was eating it my brain seemed confused. I think it was expecting chili
Hubby has microwave out and is looking it over and keeps shaking his head so I’m not feeling hopeful

YAY, I’ve lost another lb.
I’ve had a busy baking day today in preparation for my staffroom duty next week at work. I am introducing Paleo to the workplace – yeah baby!! Tomorrow I’m taking in my new recipe Perfect Paleo Chocolate Chip Cookies and Angie’s Snickerdoodle Cookies too. I have some business cards, a banner and even our recipe book all printed, looking posh and ready to go! Wish me luck!

Blueberry Paleo Waffles, maple syrup, Pineapple chunks and blueberries & coffee.
Usual Paleo Waffle recipe but I added fresh blueberries to the batter – SO good!
I HAD to taste test my cookies today. So much so that I was feeling a little cookie overloaded
We got creative in the kitchen tonight and cooked up some Mexican cuisine. Not being able to find a paleo clean Fajita seasoning mix, hubby made his own paleo version. Check back tomorrow for that Fajita Seasoning Mix recipe
The sun has shone today and it makes that Monday feeling much sweeter

Had lunch in the garden this afternoon
Left over warmed up roasted veggies and a slice of deli ham, coffee and sunshine = PERFECT Combo!
We bbq whenever the weather permits and tonight was one of those opportunities
Lemon chicken kebabs, tenderloin steak, PCC Italian sausage, sweet potato fries and salad. Followed by apple crumble and coconut milk ice cream.
A fine day of fabulous food!
