WEEK 31!

Gonna keep this brief, Just finished baking my weekly batches of Paleo Herb Buns and Paleo Scones, with the added yumminess of a touch of paleo friendly jam/jelly to my scones this time! I was inspired by our lovely Cavegirl Angie with her Thumbprint Cookie Recipe… thanks Angie!

The weather is still holding out great for us here in the PNW. SO if it looks like a good BBQ day then the meal plan will be ditched and the grill lit :)

Here is my meal plan…

Monday: Mongolian Grill al fresco :)  

Tuesday: BBQ ribs, chicken and beef kebabs with grilled broccoli and carrots.

Wednesday: Chili for grownups/Bolognese for kids over baked sweet potatoes.

Thursday: Brinner (Paleo Pancakes, bacon, sausage and fresh fruit salad) YUM! 

Friday: Chicken, sausage and very veggie stir fry.

Saturday: Paleo Curry Night! (again as it didn’t happen last week as we BBQ’d)

Sunday: BBQ hopefully :)

I am beginning my quest to find the different and best iced and ice-creamed paleo friendly popsicles/lollies/desserts. It’s a chore but someone has to do it ;)

WEEK 30!

First, thank you all for you good luck thoughts because guess what?… they paid off! My son Jonathan came 2nd in National History Day’s State Competition and now qualifies for Nationals! He now gets to compete in the country’s capital, Washington DC in June and I get to go too :)

I am so very VERY proud! It is so nice to see your kids publicly rewarded and acknowledged for their hard work. 

Oh Oh OH, a bit more good news….

One of our favorite restaurants, Claim Jumper have put my favorite dish back on their menu…

So this week…

I’m craving paleo buffalo chili so my wonderful hubby has promised to make a vat of it :) I LOVE chili and my hubby ;)

I feel like I can plug myself back into blogging and life beyond NHD for a while so I promise to blog more during the week! I have a few tips up my sleeve for helping with sticky baking problems and I do want to share my paleo thoughts of late and the latest on my paleo journey. 30 weeks… wow! 

Think I might even create a BBQ post too, I’m feeling inspired with this week’s nice weather forecast! 

So without further ado…

Monday: Pork steaks, peaches and steamed veggies.

Tuesday: BBQ ( bacon wrapped shrimp and homemade buffalo burgers)

Wednesday: Chili for grownups/Bolognese for kids over baked sweet potatoes.

Thursday: Brinner (Pancakes, bacon, sausage and fresh fruit salad) YUM! 

Friday: BBQ (Ribs and kebabs)

Saturday: Paleo Curry Night!

Sunday: Mother’s Day so I have no clue ;)

Meal Plan Monday

Week 16

Total weight loss = Hubby24 lbs and Kate’s ~ 13 lbs

Just a regular week with the Aiken’s this week, thank goodness! I have a few new recipes to try this week. Paleo Pizza is from my Everyday Paleo recipe book and I thought I could add cheese to the kids pizzas and create my own toppings. My family are fond of meat feast pizzas where as I like to add pineapple and jalapeños. The best thing about creating your own is that you can create your own ;)

My friend Rachel also made paleo meatball last week and she has inspired me to try making my own Thanks Rachel!! So I found a recipe in Everyday Paleo again but instead of using sausage I intend to use buffalo ground meat. I  also like the look of this Sausage Hash as I love love LOVE mashed sweet potatoes and this dish looks YUMMY!

Finally I want to bring “Brinner” back! I have made paleo pumpkin pancakes on a few occasions and enjoy them but I happened to stumble upon The Food Lovers’ Primal Palate’s Almond Flour Pancake recipe and though Ooooo almond flour pancakes, got to give those a go! Think I will add a few chic chips for the Roo and maybe some fresh blueberries for myself :) Obviously everything tastes better with bacon right so I’ll add a few rashes of crispy bacon as a side… YUMMY!

So..

Here’s the proposed meal plan for this week!

  • Monday: Spaghetti Squash Buffalo Bolognese
  • Tuesday: Paleo Pizza/Buffalo Chili
  • Wednesday: Sausage Casserole
  • Thursday: Rachel inspired marvelous paleo meatballs buffalo style with sausage sweet potato hash and broccoli
  • Friday: Paleo almond flour pancakes with bacon OR leftovers for those who don’t want pancakes OR for those who want both ;)
  • Saturday: Steak and Shrimp Saturday!
  • Sunday: Slow cooked chicken, pigs in blankets and roasted veggies.

I plan on upping the exercise this week. I got only one good swim in last week, but this week I plan on power walking/power talking with the lovely Angie and hopefully 2 decent swims during the week ahead!
