
FIRST, let me give you my number, 149 baby – woohoo!
This was the beginning to my perfect day!
Breakfast:
I made great paleo pancakes this morning. I used my original coconut pancake recipe but I reduced the eggs to 5 and they were much thicker and fluffier. I add choc chips to some, left the others plain and made an awesome fruit salad.

Lunch:
Actually forgot to have lunch. We went for coffee at Victor’s and I tried an almond milk Almond Joy and found it way to sweet for my liking. I sipped it politely and drank maybe a quarter, if that. I now know to stick with my usual Americano
Dinner:
Having received a very generous grift card during Teacher Appreciation Week from a student at school, the family and I headed to PF Changs for dinner.
We had a great meal, the company was fantastic and my Mother’s Day… PERFECT!
