I am sitting here in the garden watching the birds frustrate my cat Eddy, waiting for hubby to bring in a PCC rotisserie chicken and a tub of something paleo friendly from their deli. 

I stood on the scales this morning and saw 149 lb. Hoping my weight stays under 150 by Sunday, fingers crossed!

My meals for today…

Breakfast:

Mixed fruit and nut salad: strawberries, pineapple, apples, orange segments and a sprinkling of my paleo trail mix on top.

About to try my Banana Walnut Bread warm out of the oven. Check back in the morning for the outcome and recipe. I’m thinking it is going to be very souffle’ish and more of a pudding than a bread.

What a busy but fun day today! Spent some time with Cavegirl Angie at the zoo and then dinner too.

Let’s take a look at today’s meals:

Breakfast:

I was up and out to an appointment at 7:15 this morning so I was super pleased I had these coconut muffins at the ready. (Check out yesterday’s post for the recipe)

Lunch:

Lunch on the fly today….

I have been craving a Jamba Juice of a day or two now so I scratched that itch today – Felt REAL good!  I always get the “all fruit” smoothies and today I bought one of my favorites, “Five Fruit Frenzy”

Got a little hungry at the zoo so I was tickled pink to find a food kiosk that sold sweet potato fries :)

Dinner:

Taco salad with friends. Bought some 1 lb. packs of grass-fed ground beef from Safeway today, first time I had seen this line. Priced at $5.99 per lb. which I didn’t think was a bad price. I normally buy the Bison which is much more expensive. It was very tasty and will definitely buy it again.

Today’s meals…

Breakfast:

I found a link to a great Paleo Cornbread Muffins (Cornless Cornbread!) recipe on Empowered Sustenance.

I doubled the batch and added a handful of raisins to the last half.

Along with sliced apples and raw honey this was a delicious breakfast.

Lunch:

Eldest daughter came by today and we went out to lunch Mongolian Grill style. Both being cavegirls we shared a plate of many veggies, chicken and plum sauce. (no noodles or rice)

Dinner:

Feeling like I am on “stay-cation” hubby brought in Indian cuisine for dinner. We like to eat at/from Kanishka. We favor Coconut Chicken, Tikka Chili Chicken and Jalfrazi. Check out their menu.  We all love Indian cuisine in this cave! The staff there do seem to have a hard time comprehending that we don’t need/eat rice or breads. My kids do eat rice so they always have enough for the week when we order take out!

Feeling much better today except for feeling super stressed about my mum, who’s very unwell in the UK – GET WELL SOON Mam xxx Please send healing thoughts and prayers her way – THANK YOU! We need Cavegirl Sue back to her usual self and packing for her visit here.

Having posted an informative article on Facebook today I have decided to try and reduce my almond intake. It will be interesting to see if it makes a difference with my weight loss.

Here are my meals for today:

Breakfast:

Apple & Almond Coconut Flour Pancakes with Blueberries

  • ½  C Coconut flour
  • 6 Eggs
  • 1 14oz can coconut milk
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 2 tsp.  almond extract
  • 1 x (½ C) pot of unsweetened apple sauce

I even threw in some cocoa powder into the mix to make a few chocolate pancake for my little cave kid.

Lunch:

Kinda forgot about lunch until I realized I was hungry so I just randomly threw some food in a bowl: rotisserie chicken breast, paleo homemade guacamole and sweet potato chips/crisps.

Dinner:

Dinner was a little like lunch except I was craving some sweet potato mash. Found 2 white sweet pots and 1 orange and made a delicious mash, added a Tbs of coconut milk and a little sprinkle of cinnamon. Ate the leg off the chicken with a dollop of Pico de Gallo and store bought guacamole = very comforting and satisfying! OH and a nice drop of vino :)

Yay, I had a full day to work on the business today! Angie and I spent the day brainstorming, walking, cooking and baking. 4 new recipes in the bag, 2 of which with a Hawaiian feel. If the Cavegirls can’t go to Hawaii then let Hawaii come to the Cavegirls!

I also have a confession to make….

I have not had dinner per se, by this I mean that I have eaten but after cooking and baking up a storm all day we had a bunch of taste testing to do and quite frankly I’m stuffed! 

Good news…

The Cavegirls got to have lunch together :) (See below)
