Yesterday was a blur, I have to say. Today has been busy but fun. BBQ for dinner, margarita making and after dinner family badminton. :)

Here are my meals…

Breakfast:

Almond and raisin scone, pineapple with a prune on top, strawberries, coconut milk chilled. Coffee.

Lunch:

Left over taco meat, 3 eggs, 2 rashers of bacon scrambled.

Dinner:

Pork steaks, BBQ baby back ribs and salad. OH, and a Paleo Frozen Tropical Margarita :)

YAY, I’ve lost another lb. :)  

I’ve had a busy baking day today in preparation for my staffroom duty next week at work. I am introducing Paleo to the workplace – yeah baby!! :) Tomorrow I’m taking in my new recipe Perfect Paleo Chocolate Chip Cookies and Angie’s Snickerdoodle Cookies too. I have some business cards, a banner and even our recipe book all printed, looking posh and ready to go! Wish me luck!

Brunch:

Blueberry Paleo Waffles, maple syrup, Pineapple chunks and blueberries & coffee.

Usual Paleo Waffle recipe but I added fresh blueberries to the batter – SO good!

I HAD to taste test my cookies today. So much so that I was feeling a little cookie overloaded ;)

We got creative in the kitchen tonight and cooked up some Mexican cuisine. Not being able to find a paleo clean Fajita seasoning mix, hubby made his own paleo version. Check back tomorrow for that Fajita Seasoning Mix recipe :)

Continuing on with our Hawaiian theme let me introduce to you…

Chocolate Macadamia Cookies ON A STICK!

They were kid tested and well, I’ll let the photos speak for themselves!

“HOW DO YOU MAKE EM?” I hear you cry.

Here’s how…

Ingredients:

  • 3 C almond flour 
  • 1 tsp. vanilla extract 
  • 1/ 2 C coconut oil, melted 
  • 1 tsp. cinnamon 
  • 1/ 2 C pure maple syrup 
  • 2 Tbs. cocoa powder
  • 2 eggs 
  • 1/ 2 C chocolate chips 
  • 1 tsp. baking soda
  • 3 oz bag of unsalted roasted macadamias

Directions:

  1. Preheat oven to 350F.
  2. Line a baking sheet with parchment paper or use a cookie pop pan. (we did line our cookie pop pan too with parchment paper discs)
  3. Blitz the macadamias for 2 or 3 pulses to roughly chop them.
  4. Combine dry ingredients in a bowl and set aside.  
  5. In another mixing bowl, beat the eggs, oil, maple syrup, and vanilla extract.
  6. Pour wet ingredients into dry.

Cranberry and almond scone, paleo friendly raspberry jam and a dollop of coconut milk cream, apple slices and blueberries. Coffee.

Lunch

Turkey and ham apple wraps, pineapple, pistachio nuts, apple slices, sweet potato chips/crisps. 2 x squares of 86% chocolate and a cup of coffee.

Went for dinner with friends tonight as hubby’s away on business and enjoyed a…

Teddy’s Bigger Burger lettuce wrapped “Woodinville Burger” without cheese and a side of sweet potato fries, water.
