Today was a GREAT day! 

Our final application for our baking business permit has been approved and now we await inspection. Watch out, THE Northwest Cavegirls are on the UP & UP! 

Watch this space!

My microwave got fixed today, cost us over $200 but better that than over a $1000 to replace it. 

THEN my sweet cavegirlie brought home a 1st and 2 x 2nd places at her first ever track meet tonight!! 1st place was in the long jump :)

I forgot my phone today so I wasn’t able to snap a shot of lunch but I can photoshop so you can get the idea.

OK, my meals for today…

Breakfast:

Paleo Banana Walnut Bread, dollop of coconut cream, oranges and apples & coffee.

Lunch:

Yep! I ate the whole bag throughout my afternoon. Super tasty and kaletastic! I bought mine from PCC.

Dinner:

Didn’t get home from the track meet until almost 6, after a busy day at school and my wonderful hubby was slaving over a hot stove cooking up paleo taco meat. LOVE taco salads! Dumped on the left over deli delights from dinner last night too. Delicious dinner!

Good evening!

Didn’t dine out this evening. Too nice a day not to hang out in the  garden and open a bottle of the red stuff.

Here are my meals for today…

Breakfast:

Fresh fruit (apples, banana, pineapple), raw walnuts and pecans, dry roasted macadamias, chopped up prunes and a dollop of coconut cream + coffee!

Lunch:

All fruit Mega Mango (sub freshly squeezed OJ for the concentrate they would normally add)

Dinner:

Homemade BBQ pork ribs, lemon pepper chicken and Italian sausage.

Mixed greens, tomatoes, red and orange bell peppers, green onions, little plum tomatoes and cucumber.

What a busy but fun day today! Spent some time with Cavegirl Angie at the zoo and then dinner too.

Let’s take a look at today’s meals:

Breakfast:

I was up and out to an appointment at 7:15 this morning so I was super pleased I had these coconut muffins at the ready. (Check out yesterday’s post for the recipe)

Lunch:

Lunch on the fly today….

I have been craving a Jamba Juice of a day or two now so I scratched that itch today – Felt REAL good!  I always get the “all fruit” smoothies and today I bought one of my favorites, “Five Fruit Frenzy”

Got a little hungry at the zoo so I was tickled pink to find a food kiosk that sold sweet potato fries :)

Dinner:

Taco salad with friends. Bought some 1 lb. packs of grass-fed ground beef from Safeway today, first time I had seen this line. Priced at $5.99 per lb. which I didn’t think was a bad price. I normally buy the Bison which is much more expensive. It was very tasty and will definitely buy it again.

I seem to be getting a lot of beets in my veggie subscription box lately. So I pulled out an old recipe to revive. This is a great salad to take to a pot luck or dinner party.

Beet and Walnut Salad

4 medium red or golden beets – scrubbed, trimmed -
1/3 C chopped walnuts
3 Tbs maple syrup
salad greens – lettuce, spinach, chard, etc.
1/4 cup balsamic vinegar
1/4 cup olive oil
2 ounces goat or sheep’s cheese (I used crumbled goat cheese)

Bring beets and enough water to cover to a boil, then cook for about 30 minutes, until tender. Drain and cool, then peel and cube.

While the beets are cooking, heat the walnuts in a skillet over medium-low. Toast until warm and starting to smell nice, then stir in the maple syrup. Cook and stir until evenly coated, then remove from the heat and set aside to cool.

In a small bowl, whisk together the balsamic vinegar and olive oil to make the dressing.

Place Greens, beets, walnuts and dressing in a bowl and toss to combine. Sprinkle cheese on the top when serving.

Breakfast:

Cranberry almond scone (warmed) with smooshed banana on top, 2 prunes and a dollop of coconut milk cream, fresh blueberries, apple slices & coffee.

Lunch:

Bubble and Squeak! Just fry up those left over veggies from dinner the night before in a frying pan with a little olive oil. I added thinly sliced pork steak too. Boy oh BOY was this good!!! & coffee.

Dinner:

Naked Paleo Tacco Salad: Buffalo ground meat with mixed bell peppers, mushrooms and taco seasoning (as paleo clean as you can find) the organic packets from PCC and Safeway I think are the best. Anyway dump meat mix on a bed of mixed salad leaves and add all your favorite taco toppings like salsa, guacamole, pico de gallo, sweet potato chips, hot sauce etc. DeBLOOMINicous!
