Which grain-based food do you think most people miss when starting a Paleo lifestyle? I missed cereal more than anything else, but apparently the majority of people miss BREAD! I can see why. Sandwiches are the usual lunch food for a lot of folks, small and large alike. Bread is the starter at a lot of restaurants and who doesn’t love toast for breakfast? So, do you have to go bread-free when you start eating Paleo? Most certainly not! When just beginning to eat Paleo foods, you may want to recreate some of your grain-based comfort foods to make the transition easier.

Many of the grain free bread recipes I found use almond flour as the base, but I did find a few that were nut free. Also, you can substitute sunflower seed flour for almond flour cup for cup, but keep in mind that sunflower seeds will turn green when mixed with baking soda…tastes the same, but the bread will have a greenish color.

When making recreations of grain based foods you may want to keep in mind the words of the Paleo Mom “I think recipes like this are great for kids, athletes, and very healthy individuals who can handle more carbohydrates (like those in tapioca and arrowroot flours) and have no reason to steer clear of almonds (which have a high omega-6 and phytic acid content). Think of this as a special treat rather than a staple.”

I just saw this article about a 9-year-old who’s been photographing and blogging about her school lunches. Apparently because she’s gotten too much press, which coincidently has led to 2000 pounds being raised for hungry children in Africa, she’s not allowed to take any more pictures of her school lunches.

Since when do we DISCOURAGE our children from taking an interest in learning about food, nutrition and charitable endeavors?!? I’m not sure what that school board was thinking, but I imagine they’ll be hearing from a lot of angry foodies, parents, and health conscious people from around the world.

Whatever your stance on school lunches, this is just wrong! Here is an excerpt from VEG’s last entry entitled Goodbye.

This morning in maths I got taken out of class by my head teacher and taken to her office. I was told that I could not take any more photos of my school dinners because of a headline in a newspaper today.
I only write my blog not newspapers and I am sad I am no longer allowed to take photos. I will miss sharing and rating my school dinners and I’ll miss seeing the dinners you send me too. I don’t think I will be able to finish raising enough money for a kitchen for Mary’s Meals either.

This week, news revealed that “Walt Disney Co. on Tuesday became the first major media company to ban ads for junk food on its television channels, radio stations and websites, hoping to stop kids from eating badly by taking the temptation away.” Apparently, it’s thought that if television commercials hawk Disney’s Apple Slices instead of HoHos and DingDongs, then children will be healthier. The first lady is excited about it. Other companies have plans to stop targeting ads to kids. So, this will solve our problem as a nation of kids eating unhealthy food. Hmmm.

Here are some tips that I’ve used to keep our people healthier:

  • Shop the outsides of the grocery aisles. This is where the REAL food is located.
  • Join a CSA. You’ll have so many veggies that your kids will think veggies are the food of choice. Hee hee.
  • OR, be like Angie and grow a garden!
  • Don’t shop WITH your kids whenever possible… at least not until their little minds are properly equipped to deal with the onslaught of the grocery temptations. Mine now realize why the foods are placed in tempting places. PBS Kids has a fun approach to teaching this.
  • To help with the last one, shop online for groceries. In many places this is now an option! I find that I buy less junk that way because I have my list and search based on that, instead of gawking at the eye-popping displays.
  • Train kids to read labels and educate THEM on healthy choices.
  • Set the example that you want your kids to follow.
  • Limit screen time. If ads really do harm our kids food choice abilities, then perhaps the screen time should be curtailed.
  • Take matters into your own hands. Don’t wait for Disney to tell your kids what to eat. :D

Sorry, couldn’t resist that last one. I’m sure there are others and that this isn’t news to most of us. These sorts of “news items” just make me think that “huh, maybe people don’t know this stuff?” How do you keep your cavekids out of the reach of media ad influence?

If you’d like to try it, give this Chicken Satay recipe a try. It’s a wonderful spice paste that you blend up to put on the chicken. I would use it by itself, just for lovely chicken. Then, I used this recipe for the sauce with coconut milk subbed in for the milk. I used another recipe, because the first one had SO much peanut butter in it. Sub in almond butter if you don’t eat peanuts… me, I eat them. They don’t bug my tum tum and with the recipe only calling for 2 T. it was so worth it for the peanutty flavor. The recipe from the first site had cups of peanut. Sounded too peanut butter flavored to me. I prefer the sauce to be more Indonesian style than just peanuts/peanut butter like some of our local restaurants serve.

Give it a try. It will wake your tastebuds, I guarantee!
