First things first, still 2 lb. off :) TG!! I really hope to break the 150 barrier this coming week. 

Anyway short and sweet today. It’s been a busy but nice day but I’m goosed!

Breakfast:

2 egg scramble with green onions, cherry tomatoes, yellow bell pepper and deli ham.

Lunch:

Lunch was a little of this and a little of that. Taste testing you understand ;) Needed to bake these to weigh them for the business. It’s a hard knock life :)

Sent my daughter away with a paleo Red Cross parcel tonight as I can’t be doing with all these baked goods in the house. MUST be under 150 next weekend!!

Dinner:

We had a friend visiting from the UK this afternoon, well she’s studying in Oregon for a semester. The lovely Helen is a student from my school library days in the UK and a good friend of my eldest daughter. So guess what?… we grilled!

And then the kids introduced Helen to s’mores for the very first time. I was tempted to stick a marshmallow and chunk of dark choc in-between two paleo cookies but my OCD just wouldn’t allow it. Maybe next time :)

Good evening!

Didn’t dine out this evening. Too nice a day not to hang out in the  garden and open a bottle of the red stuff.

Here are my meals for today…

Breakfast:

Fresh fruit (apples, banana, pineapple), raw walnuts and pecans, dry roasted macadamias, chopped up prunes and a dollop of coconut cream + coffee!

Lunch:

All fruit Mega Mango (sub freshly squeezed OJ for the concentrate they would normally add)

Dinner:

Homemade BBQ pork ribs, lemon pepper chicken and Italian sausage.

Mixed greens, tomatoes, red and orange bell peppers, green onions, little plum tomatoes and cucumber.

Found this oddity in my back yard this afternoon.

Think I may have had a visitor of the black and fury variety and I don’t mean my cat Eddy.

Meant to take a photo of the table in the staffroom today and forgot, too worried about how the food was going down to think of capturing the moment.

I’ll do better tomorrow :)

Here are my meals for today.

Breakfast:

Paleo Porridge, fresh blueberries on top and coffee. Click here for the recipe for porridge.

Please note that I used 2 cups of raw walnuts and 1 cup raw almonds in my porridge this week. I love this stuff. I can honestly say that I could have skipped lunch and made it until afternoon recess (2pm) before realizing I’d only had a banana since breakfast.

Lunch:

Drank my iced coffee and ate a banana at lunchtime. Enjoyed my bar at afternoon recess. The orange is still in my bag. Check out these coffees from PCC. They are called Toddys and super good!

Cold brew or cold press refers to the process of steeping coffee grounds in room temperature or cold water for an extended period. It is also sometimes referred to as Toddy coffee which is a trademarked cold brewing system. Beans should be ground coarse (as one would grind for French press or percolator style brewing methods). Felt filters are used in the Toddy system.

The cold-press process requires grinding: coarse-ground beans are soaked in water for a prolonged period of time, usually 12 hours or more. The water is normally kept at room temperature, but chilled water can also be used. The grounds must be filtered out of the water after they have been steeped using a paper coffee filter, a fine metal sieve, or a French press. The result is a coffee concentrate that is often diluted with water or milk, and can be served hot,over ice, or blended with ice and other ingredients such as chocolate.

Cold brewed coffee naturally seems sweeter due to its lower acidity. Because the coffee beans in cold-press coffee never come into contact with heated water, the process of leaching flavor from the beans produces a different chemical profile than conventional brewing methods.[1]

Cold brew coffee is not to be confused with iced coffee, which refers to coffee that is brewed hot and then chilled by pouring over or adding ice.

Dinner:

We had a ton of meat left and hubby was home a little early so we grilled. Our new house has natural gas plumbed outside for the BBQ and the BBQ is just outside from our dining room and kitchen so I foresee much grilling in my future :) Love well BBQ’d food :)

Tomorrow’s staffroom paleo treat will be Paleo Pumpkin Bread with chocolate chips and raisins.

It was good and bad that there were paleo treats in the staffroom. Good because I COULD eat the treats in the staffroom and bad because I could EAT the treats in the staffroom ;)

Here are today’s meals…

Breakfast:

Again, I enjoyed 2 eggs this morning, easy cook style (microwave method). This is Honey Ham from Costco, which is my favorite deli ham right now!

Lunch:

Ran to Trader Joe’s on my lunch today and was so taken by yesterday’s Jamba Juice fruit smoothie that I lunched there again today. This time I bought the Mega Mango. I substituted freshly squeezed OJ for the concentrate that is normally in this blend. Never be shy to ask for what you want. Jamba are ALWAYS very accommodating! Back at school I enjoyed a Larabar, cashew cookie kind and one of my all time favorite paleo treats. Trader Joe’s Dark Chocolate Honey Mints. Just three ingredients you know…

Dinner:

Grilled pork ribs again. Took a photo of our ‘fall off the bone” great ribs recipe!

I guess I should start by telling you that I bought this rack of ribs tom Safeway and they cost a little over $11, which for the size, I think is a great deal.

Shallow boil the rack for an hour. Lather apple sauce on the top and add some of your favorite seasoning. I used N’Orleans Cajun Seasoning. Cover with aluminum foil while cooking/boiling.

After an hour (or longer), transfer to the BBQ and coat with your favorite BBQ sauce and grill for a further 20 mins – DELICIOUS, trust me!!

Fresh salad leaves, generous slices of English cucumber, salsa, guacamole and a handful of sweet potato chips/crisps makes for an awesome dinner!!

Today’s sausages were bought from Safeway and are paleo clean. We only actually grilled and ate the Brats tonight. They were super yummy!

Dessert:

Grilled pineapple and cinnamon. Pineapple really aids digestion and cleans the palate AND is just a delicious healthy dessert!

Breakfast:

SO I had a mini revelation today. Adding a boiled egg to breakfast allowed me to go way longer before becoming hungry. Here we have paleo waffle sticks, apple and boiled egg & coffee.

Lunch:

Lunch “on the go” today. YUMMY Jamba 5 Fruit Frenzy and a coconut macaroon bar from PCC.

Dinner:

Daddy Burgers on the menu tonight! Ever asked the butcher to prep. anything at PCC before? We did tonight. They made some great burger patties for us from 2 lb. of ground grass fed beef. We grilled them and handmade them into tasty lettuce wraps. Move over Teddy’s :)
