The munchies struck today, and in a big way!  I can not recall the last time I felt the need to eat everything in sight since changing my eating habits, but today I was there.  I opened my pantry, and saw all of the snacks that filled it (my family is very slowly joining me on this paleo/primal journey).  I am proud to say I was able to close the pantry and walk away without any of the wheat and sugar laden items.  But I still craved something crunchy, salty, and maybe with a little kick.  What to do?  After a little searching of both the fridge and internet, I decided to give Kale Chips a try.  To my surprise, they were amazing!!!  Not only did they satisfy my craving, but my little guy enjoyed them so much he pulled the tray off the counter and finished them off.  I was so happy when at bedtime he asked that I make them for snack again tomorrow!

Kale Chips

1 bunch Kale leaves (cleaned, dried well, tear off and discard stem)

1 Tbsp olive oil

1 tsp sea salt

a few shakes of cayenne pepper

Bake in preheated oven at 350 degrees for 15 minutes.
