I had to share my scrumdiddlyumptious dinner with you tonight.

My kids have been harping on for tacos for a while now and even though hubby and I are pretty much clean Paleo our kids live a very relaxed 80/20 Paleo lifestyle. Needless to say they had crispy corn taco shells and grated cheese.

Hubby and I of course did not and had THE BEST mexican meal – NAKED! ;)

Our meat base was a combo of ground bison fried with onions, mushrooms and sweet mini peppers and of course a packet of taco seasoning.

We layered it like this…

  • Mixed salad leaves
  • Generous layer of meat mixture
  • Pico de Gallo
  • Guacamole
  • Hot jalapeno green salsa
  • Sweet potato chips on the side
  • Splash of hot sauce

I didn’t miss the grains, dairy or legumes one bit but I do know the kids enjoyed theirs ;)

  1. I’m tellin’ you, if it weren’t for taco salad, I don’t think I could make it Paleo. I eat this all the time. It’s so filling and full of veggies. MMm mmm. Yours is so pretty, Miss Kate!

  2. Which kind of taco seasoning do you use?

    • Hi Billie,

      I generally use the McCormick® Mild Taco Seasoning Mix. It seems to be the lesser of all evils in supermarket bought taco seasonings. It’s ingredients are: SPICES (INCLUDING PAPRIKA, CHILI PEPPER, CUMIN), ONION, WHEY (MILK), POTATO STARCH, SALT, SUGAR, GARLIC, AND CITRIC ACID.

      I’m sure you could make your own to eliminate the dairy and potato starch. I never usually sweat over non paleo seasonings and believe me I sweat about MANY non paleo clean foods. We use seasonings so minimally that adopting these into our 80/20 ratio is fine by me.

      In saying this, if you are dairy allergic then this would not be a wise choice of seasoning. All of the foods I eat are out of choice not as a medical necessity.
