So, last week, I was confessing to Kate how much I absolutely love Bolognese Sauce. I … gulp… sort of eat it just like soup, sometimes. Yep… I do. I love it on cauliflower, I adore it on zucchini noodles, it’s stupendous over a pile of whatever vegetable you give it. BUT, I was sort of chiding myself for just scooping up a bowl and not being a bit more creative.

Last week, PCC came to my rescue. They had gigantic stuffing mushrooms ready for eating. I whipped up a quick bolognese sauce and VOILA, Bolognese Stuffed Mushrooms were born:

Easy to make. Just grab several GIANT mushrooms (mine were about 3.5-4 inches in diameter) to stuff. Then, remove the stems and clean all the mushrooms. Steam the caps in a thin layer of water until just done (mine took about 5 minutes to steam). Meanwhile, put together your favorite bolognese sauce (chop up the stems of the mushrooms into it) and let it simmer until EXTRA thick. Stuff it into those caps and eat up. If you eat cheese, lucky you, top them with it!
