WEEK 29!

Weight on the upward spiral :( Need to get back in the pool and cut back on the snacking!!  I will try harder – I WILL TRY HARDER! Too much of a good thing is sometimes not such a good thing right? ;)

I do seem to pack on a few pounds at the same time each month so I am hoping it is a cycle thing and will fall off again as quick as it went on. Remembering the concern I felt a week or two before my vacation as the same happened but was at my comfy weight by the time flight day came around. Hormones play havoc with our bodies no matter how old we are!

So… I have to be honest, last week’s meal planning was an epic fail! Thursday was the first day that I had the time, energy or inclination to make a home cooked meal! Seriously, reality kinda smacked me in the face at the beginning of the week, and OUCH it hurt ;) Thursday, I shopped and prepped dinner and was feeling very in control until I did the stupidest thing. Don’t ask me why but I put my spaghetti squashes in the oven to bake on a plastic baking tray!! Well you can imagine the mess and the smell OMGosh it was BAD!! I managed to salvage the squash and cooked them in the microwave but… AND we were entertaining too. Ah well it turned out ok in the end. Friday’s Brinner was a huge success and I bought a fresh pineapple which was delicious and I closed my eyes and reminisced about beautiful AMAZING Hawaii. We BBQ’d all weekend, ribs for my Roo and steaks for the Cavemen and Cavegirls :)

This week’s a tense one! My “caveman in the making” teenage son is competing in National History Day’s State Competition this weekend and after months of preparation, tons of hard work and much dedication he will be judged and interviewed with a hope of qualifying to go all the way to Washington DC as a National NHD entrant. The theme this year is “Revolution, Reaction and Reform and Jonathan’s website is built around his chosen topic “Nuclear Power – The Future of Energy”. His suit is hired, shoes polished, tour of local nuclear plant booked, mock interview scheduled and butterflies growing by the day. Please think good luck thoughts this coming Saturday – Thank YOU! If there were ever a kid who deserved to succeed it’s my cave kid :) Biased? YES very!! Super proud too!

Back to Paleo….

All this being said, I am hoping that this week is a little less overwhelming that last and I can pull my finger out and be supermom and house goddess. I have begun with a good start and have covered breakfasts and lunches for my cavekids for the week. Paleo buns and waffles at the ready. Waffles will be bagged and refrigerated and then my Junior High cavekid can pop one (or two) in the toaster in the morning (half asleep) and be set for a good morning with tons paleo brain power. Same cavekid fills a paleo bun full of good deli meats and takes his paleo lunch to school. He usual accompanies this with fresh or dried apple slices, handful of pistachio’s and a banana.

Here is this week’s meal plan…

Monday: Cavegirl dinner out – maybe Mongolian Grill :) Cavemen are on their nuclear power plant adventure.

Tuesday: Sausage casserole, sweet potato fries and a side of steamed broccoli.

Wednesday: Chili/Bolognese over baked sweet potatoes.

Thursday: Chicken, sausage and very veggie stir – fry.

Friday: Pancakes, bacon and a side of fresh fruit salad (mango, pineapple, apples, grapes, bananas)

Saturday: Family (celebration/commiseration) dinner out!

Sunday: BBQ – ribs, steaks and salad – weather permitting (fingers crossed)

I was up before the rest of the crew this morning and felt like baking. I put some Bacon and Egg Cups in the oven and got to work on some scones. When I had the batter ready to put on the cookie sheet I felt like doing something a little special with them. So I got out the strawberry jam (yeah, it’s not paleo, but the only ingredients are strawberries, sugar and pectin; so it’s not so bad in small doses.), placed about a table spoon of dough on the sheet, flattened it a little with my thumb (e.g. thumbprint cookies), and put a small dollop of jam in the middle. At this size, I got 15 on each cookie sheet, and the batch made 30 cookies. I baked them at 350 for about 25 minutes until they were golden brown and had firmed up a little.

 

Well, the last time I made scones, the boy wouldn’t touch them even when I said he could put jam and whipped cream on top. Today, after putting a little jam on them before cooking and calling them a cookie, he couldn’t get enough of them! And he didn’t ask for whipped cream at all. :)

 

 

 

 

Paleo/Primal Thumbprint Cookies

1/2 C coconut flour

3 C Almond  flour

1/2 C melted coconut oil

1/2 t salt

1 t baking soda

2 t  cinnamon

1 T vanilla

4 eggs – brought to room temperature

1/4 C  honey

1 C coconut milk – room temperature and mixed well

Jam, fruit or other thumbprint topping of choice

Mix coconut flour with melted coconut oil. Let this sit for about 5 minutes so  the coconut flour can soak up the oil. Mix all other ingredients into coconut  oil/flour mixture making sure that all ingredients are room temperature or your  mixture will be very stiff and hard to mix.

 

 

Preheat oven to 350F and  line a cookie sheet with silpat or parchment paper. Drop tablespoons of dough onto the cookie sheet, flatten a little with your thumb and drop a dollop of jam into the dent on top. Bake for about 25 minutes or until cookies are a little firm and golden. cool completely before removing from pan.

Ok, this is a crack-up phrase in our house. If ANYONE says “how ’bout” and pauses for one millisecond, we all yell CUPCAKES. It’s all because of this little darling who was featured on Toby Turner’s Cute Win Fail. Isn’t she the cutest thing ever?

Anyway, we made cupcakes this weekend. Just had to post a review of Elana’s Vanilla Cupcakes which were SO VERY YUMMY. They were very vanilla-ey with that nice hint of the coconut flour that you make them with. Nice cupcakes.

AND, we topped them with Chocolate Covered Katie’s “Hot Chocolate Butter“, which is amazing stuff for three ingredients. I’ve got to say, I think that stuff could be a stand in for my regular chocolate habit. It’s so smooth and creamy. Again, a lovely coconut flavor is imparted, but it’s not overwhelming. The bittersweet cocoa powder flavor wins out. It’s really a nice treat. I honestly can’t tell you the last time I had a cupcake!

Pad Thai…How I love thee. No, really, I LOVE pad thai with a deep and sincere foodie sort of love. Back in the day before Paleo, I had a period of time where I made 10-12 batches per week for a few weeks until we found our favorite. The result: we had SEVERAL favorites. That is what I am hoping to do this week. I shall record for you here “attempt #1″.

Pad Thai for ONE – Spaghetti Squash version

Ingredients:
2 T. fish sauce (Red Boat fish sauce is pretty simple …or whatever soy like sauce you want to use to make this more paleo)

This past week was the kids’ spring break, and if that’s not exciting enough, Hubby is starting a new job next week! To celebrate all of that and have an early summer vacation we decided to spend a night at Great Wolf Lodge. If you’ve never heard of this place, it’s an indoor water park and cabin-style hotel resort for families. They’ve even got this really cool adventure game you play with a magic wand that has you running all over the hotel in search of clues to complete your quest. Needless to say, we had a great time!

 

 

So, how does one go on a 2 day excursion to Great Wolf Lodge while still eating “real food” and following a paleo exercise regime? Here’s how!

 

1. Play the adventure game: This game had us doing more stair climbing than I’ve done since I climbed the 1,100+ steps of the Columbia Tower!

 

 

2. Play in the water park: More stair climbing! You know those really tall water slides? Well, you’ve got to get to the top of them somehow. The Wave tank had us jumping waves and fighting currents to stay standing. And playing on all of these fun rides and activities had us all laughing and having a great time.

 

3. Bring your own food and/or order the right food: Each room has a refrigerator and microwave, so it’s easy to bring your own “real food” to eat while you’re away. We brought some boiled eggs, trail mix and fresh fruit. And if you choose to buy food there, all of the restaurants had great options for us Paleo folk. For breakfast, we had the breakfast bar that contained a large omelet station as well as a selection of breakfast meats, veggies and fruits. Of course they had a huge carb station as well, but that was easy to avoid. For Lunch I had a lettuce wrapped burger with sweet potato fries! I’m pretty sure that the beef wasn’t grass-fed and the fries were probably fried in vegetable oil, but it was way better than eating a bagel!
