Tonight’s dinner was one of our regulars. We love pork shoulder! The juice in the pan after cooking pork shoulder is too good to be wasted, so we throw in some cauliflower rice to soak up all of that yumminess. Add a few diced peppers and onions and you’ve got the perfect meal!
As a follow on to the comments I made on whether or not RED MEAT WILL KILL US ALL, I thought I’d chime in with some thoughts on the latest meat talk.

You will need…
- LOTS of broccoli florets
- Red onions
- A pack of your favorite bacon
- Herbs and seasoning of your choice
- Olive oil
This dish began as a side created for St. Patrick’s Day and originally began as oven roasted broccoli with onions. Have you ever thought of roasting broccoli before? Well we hadn’t…I know strange as we roast all our other veggies normally and then generally steam the broccoli.
So prepare your broccoli and peel and cut your onions into chunky chunks. Lay all of them on a baking tray and sprinkle generously with your chosen seasoning. We used Trader Joe’s 21 Seasoning Salute which is my favorite mixed herbs and spices mix right now. The glug a generous amout of olive oil onto the tray over your broccoli and onions. Roast on a hight heat (450*) for 15 mins until the broccoli and onions are tender.
Because we had a ton of leftovers we decided to create dish number 2… Broccoli and Bacon. We cut up 5/6 or more rashers of our favorite bacon, that being Trader Joe’s Apple Smoked right now Fry up the bacon pieces until cooked a little crispy. Drain off the the majority of the bacon fat and then add the broccoli to the pan, shallow frying it in a little of the bacon fat then add the bacon back to the pan and heat through.
OMGosh this dish, be it lunch, brunch or a side to accompany meat is delicious. We are HUGE fans of broccoli in our house SO with the added plus of bacon, which makes everything better right?!… it HAS to be a recipe for SUCCESS!
I love eggs. I eat them nearly every morning, but some mornings, I need a bit of something with my eggs. That’s when I turn to this handsome blended beverage:
I got this idea from Tom Malterre over at Whole Life Nutrition. His Medicine Chest Smoothie was so yummy, my hubby made it a part of his everyday routine. I don’t always have those items on hand, so here’s our everyday shake:
INTO THE BLENDER WITH YOU!! (makes two 12 oz. glasses full)
1 apple or pear, cored and chopped (of course you wash it… gee whiz)
1 tablespoon of grated ginger (I freeze it and grate it on a microplane)
a big handful of kale leaves (I really love using the Dino Kale or the Red Kale for this… so much color)
Water to fill the blender about 3/4 of the way of the veggie fruit level or more if you like this more water.
Blend all of this until it’s a nice homogeneous texture. I don’t have a vitamix, just a regular old blender, and this is sort of a “chewy” shake, but I really like it. It’s a super burst of fresh in the morning and goes great with my eggs!
Why don’t I just JUICE, you ask? I think it’s better to get the WHOLE food, fiber and all. I don’t really drink juice in general. I’m not against other people juicing, really, go ahead. I just want the whole food. I don’t even peel the ginger, I just wash it when I bring it home and then grate it with the peel on. I think there is something to getting the nutrients in the foods the way that they are. Give it a try, I think you’ll be pleasantly surprised. IF you’re a big chicken, start with spinach or lettuce, instead of the kale. I won’t make fun of you… ok, I might.
We did a great deal of eating out last week and I do plan to write a post and review on some of the highlights and lows of those experiences. From Mongolian Grill and Claim Jumper to the other end of the spectrum of the revolving Seattle Space Needle restaurant. I will get round to that post asap … promise!
Hubby is HOME, hence the buffalo chili on the menu for this evening (BIG smiles) I have more birthday celebration this week too with friends and hopefully a date night with just the hubby and I This coming week I will be checking out Amazon Grill and my favorite restaurant for steak, Earls! I have a hard life It is amazing that I can eat all these amazing dishes and still maintain a consent weight and wellbeing!!
My cave girl BF Debbie bought me the very apt birthday gift of a pucker snorkel set for my approaching Hawaii trip. If I were a cave girl back in the day I think I would have lived primarily on fish as I am such a water baby and LOVE to swim. NOW I can fish more efficiently thanks to Cavegirl Debbie Wonder what the members of my local gym are going to make of me this week…
