I discovered something this morning, that I have been missing all of my Paleo lifetime…maybe my whole lifetime! For breakfast, I made my usual three fried eggs with baby kale sautéed in coconut oil, then looked over at the bottle of olives we purchased at Costco yesterday. Hmmm, would olives taste good with eggs and greens? I wasn’t sure. But I’m pretty culinarily adventurous; so I thought I’d give it a try. Oh my! It was exactly the thing breakfast has been missing all along! The salty/sour of the olives fit with the fattiness of the eggs and the sautéed kale perfectly! This will become my go-to breakfast from here on out! Give it a try.

 

One of my favorite things this past year has been Isernio’s Italian Chicken Sausage. Yep, I LOVE sausage. Chicken sausage doesn’t sit quite so heavily on the tummy and this one tastes so delicious. I use it in several places that I used to use a more traditional Italian sausage, but my “go to” with this sausage is to just scramble it in a cast iron skillet and add a “mess o’ greens”, as my family would say, to stir fry up with it. My family and friends laugh at me because wherever I go these days I am never without snacks for all, paleo of course! With 3 growing cavekids, one of which grows more and more into a burly caveman by the day ;) Picture the scene ~ 14 years old, well over 6ft tall and size 13 feet… I caveKID you NOT!

Personally speaking, I have found that having a good assortment of healthy snacks in the pantry makes my paleo lifestyle that much easier. Over the past 24 weeks I have built up my favorites which have become a staple on a good “full pantry” day :)

I thought I would share these with you in the hope it will make your paleo life easier and a happier one too! Please remember to eat all these in moderation if you are seeking weightloss from your paleo lifestyle.

  • Lots of fresh fruit
  • Trader Joe’s unsweetened pure fruit leathers/bars
  • Raw almonds – Trader Joe’s or Costco
  • Raw walnuts - Trader Joe’s or Costco
  • Dried pineapple rings (unsweetened and unsulphered)
  • Trader Joe’s Raw Trail Mix snack bags
  • Cardamon Energy Balls

My all-time favorite snack combo would have to be a chunk of your favorite dark chocolate and a black mission fig ALL IN AT THE SAME TIME! You have to try it… go on! you CAN fit it all in and believe me it is worth the effort. MMmmmmmmmmmmAhhhhhhhhh ~ SO GOOD :)

Meal Plan Monday

WEEK 24!

Weight staying the same :)

Lots of additional birthday celebrating last week ALL paleo style! Girlie night with friends at Amazon Grill and was SO impressed that Cavegirl Debbie and I visited again for lunch this past Saturday. If you haven’t already been it is a “must go”. If you choose to go for lunch the price is around $23 per head for all you can eat DELICIOUS and mostly “paleo clean” veggies and salads, fresh fruits and every awesome side you can think of… seriously, they have to be seen and experienced to be believed! Then Brazillian BBQ style endless spits of meat from every animal in every cut and marinade :) You choose to take or leave it and they keep on coming around until you stay stop. 3 hours Saturday lunchtime Debbie and I ate like a cave girl. A lazy cave girl I must admit but hey if the animal comes to the cave girl then…. more energy for putting the world to right!!

Talking more of Cavegirl Debbie!!! We all and to give her a gentle HEAVE HO in getting her AMAZING recipes posted here on Northwest Cavegirls!! I joke with her saying “you are not holding out on us are you? You are not about to publish a recipe book are you?” Debbie is renowned for her desserts and cakes. Having made an amazing paleo carrot cake for Cavegirl Angie’s birthday which was scrumptious, Debbie followed and maybe topped that with her surprise for me…

It’s Starbuck’s pilot juicing store/cafe in downtown Bellevue. We were super surprised to find many wheat free options and much coconut used :) A little pricy BUT I would definitely pay $2 for a little pot of paleo friendly chocolate mouse, wouldn’t you?!!

AND… they have lettuce wrapped sandwiches ~ Hallelujah!

Anyway, here is my proposed meal plan for this week…

Monday: Spaghetti squash bolognese
Tuesday : Jamaican Jerk Chicken, roasted veggies over oven baked sweet potatoes
Wednesday : Mixed Grill (sausages, bacon, egg scramble and probably a side of broccoli ;) )
Thursday: “P”Indian curry (paleo Indian curry) over cauliflower rice
Friday: Brinner and fresh fruit salad
Saturday: Eat out
Sunday: Sunday Dinner (roasted joint of meat, big selection of veggies steamed or roasted and sweet potatoes, baked, roasted or mashed usually with gravy) followed by dessert :)

I am particularly excited for my hubby’s “P”Indian creation on Thursday, he is the curry MAN and I love Indian cuisine and well… I’m excited! AND then we have a favorite of the Aiken’s, or I should say was a favorite of the Aiken’s. Claim Jumper (restaurant) had THE BEST Jamaican Jerk Chicken on their menu and my Cave College Kid Emma and I would order it EVERYTIME we went there and then they took it off the menu! I KNOW sniff sniff!! :(

I’ll be sure to blog the recipe and PLEASE DON’T FORGET to leave us a comment with some words of pressure, I MEAN encouragement for our lovely Cavegirl Debbie :)

We love Easter at our house! I have many childhood memories of egg hunts, rabbit ears,  ham and chocolate bunnies, and I want my kids to have those happy memories of Easter as well. Since we live in the Pacific Northwest, it’s usually rainy on Easter Sunday, like every Sunday in all but about 3 months of the year. So we have our egg hunts inside. We only use plastic eggs; if some don’t get found, I’d rather find some stale jelly beans in a plastic egg a few months later rather than a really smelly real one. Hubby and I hide the first round of eggs and the kids hunt them throughout the house. Then the kids hide them and the big people hunt. This goes on for quite a while until the food is ready, and we may even do more egg hunts after we eat…the kids like them that much!

The menu for Easter dinner is not really set in stone carved by years of tradition. We mix it up a bit from year to year depending on what really good meat we happen to find. This year we’re going with a Nitrate/Nitrite-free ham from Trader Joe’s. In years past we’ve had leg of lamb, which is also a big hit. A few years ago I discovered that cooking the ham in the crock pot made it not only an easy meal to cook, but made the ham and everything in the pot with it really yummy. So I’ll probably go that route this year as well.

Since we have so many eggs, we’ll definitely boil up a dozen or 2, but we may or may not dye or color them. Our eggs are already various colors and don’t dye well, since they aren’t all white. I could save a dozen or so white ones, or we may just go with the natural colors of our eggs. We’ll see what the kids want to do. In years past we’ve gotten out the markers to decorate eggs, so that’s always an option as well. And we’re not ones to leave those decorated eggs sitting in a bowl until they go bad. We eat those bad boys right away after taking a few pictures to prove we actually decorated them. I like Deviled eggs, but the kids prefer theirs simply boiled.

Below is the menu we’ll probably be eating on Easter Sunday with maybe a few extra carbs thrown in for the kids’ enjoyment.  :)

Crock pot ham with carrots

Nitrate/Nitrite free ham

about 1 lb baby carrots

Place ham into crock pot then place baby carrots on top and on sides of ham. Add about 2 C of warm water. Cook on High for about 4 hours or low for about 6 adding water if needed.

 

Roasted Asparagus

1 bunch of asparagus

1 Tbs olive oil

salt and pepper to taste

Wash asparagus then by holding the bottom tip of the stalk and the top of the stalk bend the asparagus until the bottom inch or so breaks off. Throw that inch away. Some stalks will break closer to the bottom than others. The part that breaks off is the woody part that is not as yummy. Rub stalks with olive oil then place on a cookie sheet and sprinkle with salt and pepper. Roast at 400 degrees for about 10 minutes. Asparagus should be bright green when cooked. Don’t over cook!

Kate’s Broccoli, onions and Bacon

 

Deviled eggs

1 dozen organic or backyard chicken eggs

1/4 – 1/3 C Primal Mayo or other mayo of choice

1 Tbs Dijon or other prepared mustard

1-2 Tbs dill pickle relish

Boil and peel eggs, then slice in half length-wise. Remove yolk and place in a quart zip lock bag. Prepare Paleo May (or use regular Mayo) then add it to the bag with yolks; add mustard and relish to bag as well. Mash bag to mix all ingredients well. Cut corner off of the bag then pipe yolk mixture into egg whites. Sprinkle with paprika if desired.

 

Chocolate Torte

This chocolate cake with frosting was very yummy, full of protein and my kids loved it. We’ll be having it again for Easter.

We had these last year and they were amazing. Easter is the perfect excuse to make them again.
