This super smart squash is… a spaghetti squash and it’s been a revelation to me and mine and I hope it becomes one for you and yours too!
Here’s it’s deal…
Cut in half and rub innards with olive oil
Cover with aluminum foil and bake at 375* for around an hour. (this one took 75 mins.)
I remove the foil with 15mins left on the clock to allow the squash to brown a little.
Make bolognaise sauce as you normally would. I slow cooked mine with lean ground buffalo.
Squash should be tender once cooked.
Then take a fork and scrape the squash strands.
Brilliant eh?!
Seriously tasty and really did hit the pasta spot. Hubby loved it and spaghetti squash has become a staple in our Paleo lifestyle!

Kate, Angie, et.al. ~ Yum! I love spaghetti squash! I also roast the seeds and eat them as a snack. The only thing I waste is the stringy raw inside around the seeds and the shell. LOVE THE SEEDS! If you also blend them raw into smoothes, but you have to blend for a while to really get them ground up.
I did something similar but used a different kind of squash. I REALLY want to do something for dinner and could only find a “Divine”?? squash, something with a D. It was pretty tasty even though it did not “spaghettify”.
was it a Delicata squash? If so, those are very yummy with some cinnamon sprinkled on them after you roast them!
